Alfred Keller delights with award-winning à la carte dishes and multi-course Signature and Innovation tasting menus, paired with a celebrated wine program that features 600 of the world’s best wines.

About the Chef
Young Austrian Chef Michael Gollenz leads the kitchen at Alfred Keller, Alhambra’s signature fine dining restaurant. Gollenz took over as Alfred Keller’s Executive Chef in 2021 under the mentorship of 2* Michelin Chef Christian Kuchler. He earned the restaurant’s first Michelin star soon after.
Chef Gollenz’s cuisine is founded on classic French cooking techniques, elevated with flavors from around the world. He’s worked alongside Michelin masters such as Christian Scharrer and Stefan Heilemann and at renowned restaurants including Ecco St. Moritz, Widder Restaurant in Zurich, and Restaurant Aphrodite at Hotel Giardino in Ascona. Gollenz earned Alfred Keller a Michelin star in 2021 and 16.5 Gault&Millau points. He was awarded the Gault&Millau Croatia Trophy ‘Great Chef of Tomorrow’ in 2022.

Alfred Keller’s menus showcase a sense of continuity through local culinary customs on the island and Croatia and influences from across the globe. Each dish highlights the purity of each product, creatively fused with Chef Gollenz’s vision. The Michelin-star Mediterranean fare is masterfully crafted with island herbs and ingredients, celebrating tradition, culture, and artistry. Each plate takes a thoughtful approach to a local restaurant experience where Croatia’s finest produce, fish, and meat take center stage.
Ingredients and thesupply chain
Nature is Chef Gollenz’s chosen producer. The meticulous menus embrace sustainable sourcing and the local food movement, paying attention to flavor while reducing the restaurant’s carbon footprint. Local family farms are the common thread of Alfred Keller’s dishes, promising a zero-kilometer philosophy to highlight ingredients produced on the island and Croatia, with a relatively small part of the menu ingredients from abroad. Native island herbs, olive oil from the neighboring Cres Island, and Lošinj lemons are just some of the ingredients used to promote the fruits of Croatia’s fertile soil to the world.
